Back on it, and cauliflower rice

After a couple of weeks I’ve returned to keto. A couple of things made me stop. The first was skiing – I went over to Morzine and the first day skiing I was incredibly cold, such that I didn’t enjoy it. Day 2 not much better, then on the third day I had a magnificent croissant and some wonderful French bread 🙂

Then I got flu. Four days in bed and there was no way I was bothering to cook. Also I reckon keto must cause a little stress on the immune system, and I wanted to get better!

Now that the nasty virus has gone, it’s time to get back on the wagon! I was pretty surprised to only have put on a couple of pounds despite a lot of bread and a not insubstantial amount of pizza, back up to 13 st 10 lb. Target is below 13 so still a fair way to go…

The inaugural feast this evening was creamy chicken curry with cauliflower rice (serves 2):

– 400g chicken thighs
– random quantities of ground cumin, coriander seeds, cinnamon and chilli
– mustard seeds
– fresh ginger (finger sized)
– three cloves of garlic
– an onion
– a couple of chopped tomatoes
– 100ml thick double cream
– chicken stock cube
– splash of water

To make the curry, I know there’s an art to it but I fry the onions and add the chicken in butter, brown and then lob all the spices, garlic and ginger. Fry for a bit then add the tomatoes, stock cube and water. Simmer for 20 mins then remove from the heat and stir in the cream.

To make the cauliflower rice, chop up a whole cauliflower into little lumps and then put in a food processor for a couple of seconds, so it’s in little bits (like rice). Melt some butter in a pan and add the cauliflower. Mix in the butter and add a little salt. Then cover and cook on a very low heat until it’s softened.

This was lovely and the cauliflower actually tasted a little bit like rice…

Ok it does look a little bit like poo.
